Roughly half their meat items are broken down from a weekly delivery of local beef from Chickering Farm in Westmoreland, NH with and unparalleled seafood program. The chef procures 100% of their fish themselves – leveraging some generational connections on Boston’s own Fish Pier. Everything is hand selected – all products wild and directly related to that day’s unique catch. The menu is reprinted daily to reflect rapid seafood market changes in a historical and unique setting- five elegant dining rooms are tucked throughout an antique brick townhouse overlooking North Square in the heart of Boston’s North End neighborhood.
The ideal server candidate must understand and appreciate why everything above is absolutely necessary to a special restaurant. A solid mastery of service etiquette is expected, as well as a desire to share (and enhance) the joy of dining in the Italian style. They have a full bar and an all-Italian wine list. TOAST is the point of sale system. A minimum of two years fine dining experience is required.
The ideal host candidate can work nights and weekends starting at 4pm. OpenTable knowledge is a benefit but not required. Politeness and civility are absolutely necessary.
Mamma Maria has little turnover and is very busy. They are open for dinner seven nights a week with no lunches. With a dedicated kitchen crew, they are lucky to know many of their customers and most nights are 97% reservations and private events.
