The ideal server candidate must understand and appreciate why everything above is absolutely necessary to a special restaurant. A solid mastery of service etiquette is expected, as well as a desire to share (and enhance) the joy of dining in the Italian style. They have a full bar and an all-Italian wine list. A minimum of two years is normal – but they have had successful candidates with less experience. Politeness and civility are absolutely necessary.
