Five or more years in the industry are required, covering the head server or captain position for at least two of them. Wine knowledge is a must, familiarity with French food is preferred. Strong work ethic, full availability, good managing abilities are required. L’Espalier under Chef Frank McClelland, 2007 James Beard award winner, is often credited with being the first restaurant to bring haute cuisine to Boston and it is the only independent restaurant in New England to receive fifteen consecutive Five Diamond awards from AAA. In 2015, Star Chefs recognized their Chef de Cuisine and Sommelier; additionally, they have a nationally recognized Pastry Chef, Fromager and published Tea Sommelier. Located on Boylston Street when it opened in 1978, L’Espalier relocated adjacent to the Mandarin Oriental Hotel in 2008.
