Culinary and Operations Trainer

Role: Lead the process of designing and creating systems for kitchen operations in collaboration with kitchen staff. Ensure product quality and presentation and identify opportunities for improving quality. The position involves both hands-on training and the administrative task of designing, developing and documenting systems.

This is a 3 – 6 month temporary position, paid hourly for 10 – 15 hours per week.

The ideal candidate for this position will have excellent culinary and communications skills as well as a desire for promoting a culture of learning and a strong commitment to their open book management model.

Responsibilities:

  • Lead the process for the design, creation and implementation of systems for all kitchen functions including inventory monitoring, product ordering consistent and efficient preparation of menu items and compliance with food safety standards.
  • Work side-by-side with kitchen staff to provide hands-on training and skill development ensuring that all staff will be able to implement systems independently within 3 – 6 months.
  • Develop a system for managing staff schedules to meet labor cost objectives and tracking menu items to identify strong and weak performers as identified in open book management model.
  • Ensure that all items coming out of the kitchen meet quality and portion control standards.
  • Oversee the waste management systems to ensure that food waste is limited, recycling is sorted properly and composting is maximized.
  • Participate in the review of menu items with attention to controlling the cost of goods and creating popular menu items that promote profitability.
  • Provide timely and constructive feedback to kitchen management and staff.
  • Work as a member of a team with a goal of sharing knowledge, building skills and establishing systems.

Qualifications:

  • Excellent culinary skills
  • Experience running and managing professional kitchen operations and establishing systems
  • Strong interpersonal, leadership and teaching skills
  • Experience at a nonprofit that addresses issues related to homelessness, housing, job training, social justice and/or urban agriculture preferred.
  • Commitment to helping the most vulnerable in their society and to the mission of Haley House

Line Cook

Role: Responsible for preparing and serving delicious food in a community environment. This position works closely with cafe management, kitchen staff and cashiers to ensure excellent and timely customer service and a clean and healthy food service environment. Dedicated to their mission as well as their partnerships with the community.

They are looking for individuals to work on an hourly basis either full-time or part-time and offer excellent healthcare and dental benefits as well as PTO and life insurance.

Responsibilities:

  • Prepare food items consistently and efficiently while adhering to established recipes and portion sizes
  • Maintain a clean and sanitary work area including tables, shelves, grills, sauté burners, ovens, flat top range and other cooking equipment as well as refrigeration equipment
  • Ensure that customers are politely and warmly greeted and are given timely, responsive, friendly and courteous service
  • Assist with completion of tasks involving line set-up, food preparation, clean up and breakdown
  • Maintain an excellent attendance record and provide timely notice when absent or arriving after the scheduled start of the shift
  • Participate in Open Book management processes and look to identify opportunities to help the Cafe grow revenues and manage staff costs and costs of goods served.

Qualifications:

  • Must be able to lift 50#
  • Must be able to walk up and down stairs and ladders with heavy objects
  • Must have the ability to use a knife; advanced knife skills a plus
  • Must be able to perform tasks standing for up to 6-8 hours at a time
  • Able to move heavy objects in and out of extreme temperatures (ovens, walk-in freezers)
  • Culinary training or prior relevant work experience preferred
  • Experience at a nonprofit that addresses issues related to homelessness, housing, job training, social justice and/or urban agriculture preferred.
