
Giulia is looking for a sous chef who can help lead the Cambridge restaurant into its 10th year!

- Spirited and generous cooking with bold flavors and rich textures that is firmly committed to supporting robust, diverse and vibrant food systems both locally and abroad. They explore and interpret regional Italian cooking so that it is alive and present in the local community.
- Lots of pasta! Hand-crafted pasta has been the centerpiece of the menu since they opened in 2012. Their ambitious program utilizes the finest stone milled, small batch house-milled and Italian specialty flours. They prepare shapes as diverse as floriani red flint corn cresc’tajat, emmer farro fazzoletti and buckwheat pizzoccheri, to more traditional semolina bucatini and egg yolk rich pappardelle.
- A commitment to traditional cooking techniques, including whole animal butchery, fermentation & pickling, charcuterie, sourdough leavened bread and a complete in-house pastry program featuring gelati, sorbetti, biscotti and torte.
- An opportunity to learn and grow as a kitchen manager. You’ll be responsible for prepping and working a station while upholding their ambitions culinary standards in a busy and fast paced environment. You will also have responsibilities related to menu development and execution, kitchen operations (ordering, receiving, scheduling, etc) and interacting with the FOH team during educational pre-shift meetings.
