Formaggio Kitchen – Butcher

Formaggio Kitchen is seeking a full-time, salaried butcher. This individual will join a professional team committed to excellence and consistency within a fast-paced retail setting.

The butcher counter works primarily with whole animals, and the butcher will be responsible for receiving deliveries and breaking down whole animals into primals and retail cuts. This position will be asked to keep track of meat inventory and maintain a sanitary workstation. The butcher will also help customers at the butcher case as needed during peak times. The butcher is expected to teach the counter staff about the various cuts and help to develop the team’s butchery skills. The butcher will work closely with the charcuterie department as well as the kitchen department to help distribute meat throughout the store.

Great communication skills, knife skills, whole animal butchery experience (beef specifically) and the ability to work cleanly and quickly are a must. Two years’ experience in a butcher shop is strongly preferred. Must be able to lift up to 50 pounds.

COMPENSATION
