Flour Bakery + Cafe – Executive Pastry Chef

Flour Bakery + Cafe is seeking an Executive Pastry Chef for its growing pastry department. Founded by James Beard award winner Joanne Chang in 2000, Flour is a beloved Boston institution devoted to bringing joy and delight to thousands of Bostonians every day through extraordinary food, pastry, and hospitality. The Executive Pastry Chef is responsible for the pastries at all 9 Flour bakery locations and works closely with Joanne and our Culinary Director to ensure exceptional pastries at the bakeries at all times.

The Executive Pastry Chef will continue to innovate our menu and push our vision of offering the best pastries in Boston and the country and of being an industry leader in baking excellence. This position is vital in maintaining Flour’s core mission of serving amazing food and offers a rare opportunity to have a substantial impact on an iconic Boston bakery/cafe.

Responsibilities:

  • Take the lead as the creative force for Flour’s pastry program
  • Spearhead the development and testing of extraordinary new pastries and seasonal holiday specials along with Joanne and our culinary team
  • Create a sustainable plan for menu changes at the bakery level and at the commissary level
  • Work in conjunction with our production pastry chef to seamlessly integrate menu items into our production schedule
  • Train pastry cooks and kitchen managers in the proper execution and roll out of menu items along with the culinary team
  • Lead the bakery in pastry skill and knowledge development
  • Be accountable for the quality and consistency and presentation of all pastry products through regular tastings and trainings at both the commissary and the bakeries
  • Ensure proper levels of pastry items are ordered for the bakeries and prepared by the production kitchen by guiding kitchen managers to accurately use our inventory system and order guides to control inventory.
  • Push the long term vision of Flour’s pastry program to ensure we remain Boston’s most beloved bakery
  • Work with our culinary team to improve our pastry systems and processes at the commissary and in the bakeries
  • Lead and motivate all pastry team members and all culinary team members to produce the best product possible across all departments
  • Have a pulse on trends and what other businesses are offering and bring the best ideas to Flour
  • Lead pastry marketing photo shoots
  • Plan educational field trips to engage our pastry team
  • Help teach classes both to our team and to the public

Skills for Qualification:

  • 4 to 6 years of pastry department leadership and management in a multi-unit bakery/high volume bakery/restaurant or similar
  • Outstanding communication skills
  • Ability to embrace new information and learn quickly
  • Superior emotional intelligence, ie a proven track record of staying positive during challenges, demonstrating a strong ability to influence key stakeholders, building consensus and strong teams.
  • Extreme attention to detail
  • Effective time management and delegation skills
  • Proven and on-going ability to grow sales and control costs
  • Spanish speaking preferred or a willingness to learn and grow ability to speak Spanish
  • Be open to all feedback and committed to experimentation and observation to gain better knowledge of how to improve our pastry department

Compensation:
From $100,000 annualized
