DW French – General Manager

Chef Douglass Williams and the team behind MIDA is proud to launch its newest concept: DW French. This modern French Bistro will be debuting in the Fenway neighborhood in Spring 2023. We are now searching for an experienced General Manager to help lead the grand opening.

DW French draws inspiration from the streets of Paris as well as famous cuisine from all regions of France. The menu revolves around presenting the classics of French cuisine with approachability, flawless technique, and the absolute best quality of ingredients. The goal is to celebrate the rich history of French cuisine – showcasing the food along with an upbeat and fun-loving attitude while still respecting a high level of service and attention to detail.

The beverage program will be heavily focused on the bounty of French wines and spirits. Our wine list will feature artisan producers from some of the more sought after regions as well as explore some of the lesser known areas of production. The cocktails will be focused on incorporating French spirits and flavor profiles into classics relatable to the local consumer. We are all about showing the best of what France has to offer in an approachable and fun way.

Since opening MIDA in 2016, Chef Douglass Williams has been recognized by Food & Wine Magazine as one of the “Best New Chefs” in the country as well as a James Beard Award Semi-Finalist for “Outstanding Chef”. Chef Williams has also become a vocal advocate for the importance of embracing diversity and community within our industry.

About the Role:
At DW FRENCH, we want to create hospitality and generosity for ourselves so we can share it with our guests and ultimately, the larger community. The position of General Manager at DW FRENCH requires the ability to oversee all daily operations independently and in partnership with the Executive General Manager, meet financial goals, and coach a team of managers that inspire others to work within the DW FRENCH standards for service and hospitality. Precision, patience, resourcefulness, and a passion for and knowledge of good food and drink are essential elements to succeeding in this role.

The General Manager of DW FRENCH is responsible for the front and back of house teams, as well as all relevant systems connected to service, product, and hospitality.

Core Strategic Focus:
Take a global view of restaurant operations, using weekly financials and established experience with the DW FRENCH brand to make smart and savvy decisions. Coach and develop all managers to succeed and develop in their positions. Make DW FRENCH an ambitious, inclusive, and welcoming place to work. Drive sales and financial performance of the restaurant through continuous improvement of hospitality, service, and daily operational efficiency.

Responsibilities:

  • Lead restaurant operations comprehensively, extending to both the front of house and back of house teams
  • Guide management team to hire, train, develop and coach staff, reviewing all personnel decision making around compensation, development, and terminations
  • Ensure restaurant is properly staffed at all times to meet sales, service, and labor goals by actively posting hourly jobs across job boards and reviewing/interviewing candidates with managers and sous chefs
  • Understand and execute the DW FRENCH beverage program, presenting ideas for innovation within the established framework to deliver both financial efficiency and guest appreciation for the program
  • Be guest facing during service, ensuring staff is delivering food, beverages and a style of service that represents the DW FRENCH brand and values
  • Create guest relationships that are meaningful to DW FRENCH operations and encourage repeat business and staff retention.
  • Implement a guest notes program and ensure it is continuously updated
  • Deliver accuracy, efficiency and smart decision making in staff scheduling, training, restaurant set-up, cleanliness, and care of facilities, working through management team across all departments
  • Manage all aspects of the front of house operation including oversight of staff scheduling, training, correct setup and breakdown before/after service, cleanliness of restaurant, equipment, and furniture
  • Take a proactive global view of the restaurant to make decisions and create initiatives related to sales growth, staffing, restaurant events, and neighborhood engagement
  • Work with Events Manager to determine restaurant private event strategy, understanding when it is advantageous to the restaurant to book and execute special events for both financial and cultural reasons
  • Supervise, support, and build all facets of DW FRENCH’s service, including in-person dining, takeout, delivery, patio service, and private events
  • Respond efficiently and accurately to guest feedback. Communicate with front and back of house staff on guest experiences, both positive and negative
  • Constantly work to improve the flow and efficiency of service
  • Ensure the restaurant follows local, state, and federal regulations regarding food handling and sanitation
  • Lead management team to complete all daily financial reports, cash outs, and bi-weekly payroll
  • Ensure beverages, dry goods, and restaurant supplies are ordered, inventoried, and organized in an efficient manner with the goal of minimizing cost and waste
  • Execute employee training programs to promote consistency and quality of food and service
  • Manage operational structure and key daily check points
  • Lead coordination on holiday promos
  • Thoughtfully input sales projections and labor forecasting based on past experience, holidays, and events

Requirements:

  • Multiple years of prior restaurant service experience, ideally in management role
  • Strong interpersonal & hospitality skills
  • Excellent organizational skills
  • Ability to anticipate guest needs
  • Result-driven, with a proven ability to be a self-starter
  • Availability to work nights, weekends, and holidays
  • Strong working knowledge of restaurant service, beverage, safety, and sanitation practices
  • Ability to stand for the entirety of an 8-hour shift, lift and transport items in excess of 50 lbs., kneel, bend over, lift items above head, work in small or cramped spaces
