Chef Robert Fathman welcomes guests to Azure on Monday, May 23rd for a four-course wine dinner and discussion with special guest, Bill Russell, winemaker at Westport Rivers. Fathman’s sophisticated spring menu is specially designed to compliment the vintage and style of each Westport’s wine being offered. The evening gets underway at 6:00pm with hors d’oeuvres like mini lobster rolls with orange-chipotle mayo; freshly shucked oysters with cucumber mignonette; and corn cakes with sunny side up quail eggs and caviar. Dinner follows shortly thereafter with courses like salad of spring asparagus micro cress and soft poached egg; seared sea scallops with curried cauliflower puree and red pepper-black sesame seed gastrique; California sand dabs stuffed with peekytoe crab meat with pureed potatoes, spring veggies and ruby red grapefruit beurre blanc; and an ode to blueberries to top it all off.
