Forage ups the ante on its Tuesday Wine Dinners with wintry themes chosen by owner and wine guru Stan Hilbert. Each week Hilbert and chef  Eric Cooper compare notes and collaborate on the pairings so you can be sure the evening’s four-course menu will be in total harmony whether it’s built around sparkling wines or bottles from Spain.
