On Monday, March 6th Tosca’s chef Kevin Long takes guests on a culinary tour of the Marche region of Italy via the wines of Umani Ronchi. The six-course meal includes palate-pleasing courses like Duxbury mussels brodetto; handmade pasta sheets with fig and thyme braised rabbit; Berkshire pork cutlets with shaved mountain montasio; and beef tenderloin with spinach mousse, cane sugar, sea salt and green olive gremolata. Pastry chef Maria Cavaleri Gilardo brings dinner to a close with vanilla bean panna cotta drizzled with wild honey and cioccolatini (assorted truffles and chocolaty treats).
