Tuna Poke Tutorial with Marc Orfaly

Try your hand at tuna poke with some guidance (virtual hand-holding and step-by-step online instructions) from the ReelHouse Boston’s Executive Chef, Marc Orfaly. The six time nominee for the James Beard Foundation’s Best Chef Northeast will be teaming up with his friends at Boston Magazine and Botanist Gin for an Instagram cooking/cocktail demo. Just scroll your way over to BMag’s Insta feed at 4:00pm on Thursday, October 1st to catch the action – Orfaly will walk attendees through the ins and outs of tuna poke-making and share a recipe for a special gin drink to pair with it. Ingredients:
10-12oz of Yellowfin Tuna Loin
Canola Oil
1 oz Sesame Oil
1/2 oz Sambal
Black and White Sesame Seeds
1 bunch Scallions
2 cups Sushi Rice
1 pack Wonton Wrappers
1/2 cup Red Wine Vinegar
Furikake rice seasoning (optional)
1 tablespoon Mirin
2 tablespoons Sea Salt
1 teaspoon Sugar
Paprika
Garlic
Chili Flake
Saffron (optional)
Equipment needed:
(1) small rice cooker
(1) blender
(1) large mixing bowl
(1) small pot
(1) deep stock pot

Gin Cocktail
1.5 oz Botanist Gin
.75 oz Elderflower liqueur
.75 oz Green Tea syrup
.25 oz Fresh Lemon Juice
