The phrase is Executive Wine Director Cat Silirie’s maxim that reminds her each fall to pair French pinot with game birds, and that’s exactly what The Butcher Shop is doing, with a five-course fowl flight from Chef de Cuisine Amanda Lowry paired with five wines perfect for the season.
