Lumière and chef Michael Leviton host an evening with winemaker Stephen Ross Dooley, owner of Stephen Ross Wine Cellars. On Monday, April 12th, Leviton matches dishes like shiso and lemon cured wild king salmon with upland cress, apple and radish salad and soy-ginger vinaigrette; and seared Stonington, Maine sea scallop with creamed morels and green garlic, onion confit and thyme jus with Dooley’s award winning wines. The five-course dinner menu will also include Niman Ranch pork tenderloin with caramelized endive, dried sour cherry and citrus jus; Niman Ranch rack of lamb braised lamb and potato galette with roasted garlic spinach purée and tapenade jus; and a caramelized apple puff pastry tart.
