Ever wondered how the talented team at Sofra makes all those yummy things? You can get the whole scoop (and then some) from the award-winning team at either of two upcoming cooking classes focusing on Armenian breads and savory pies.

The first class, scheduled for 6:30-9:00pm on Thursday, March 23rd, costs $120 and is demonstration-style where you’ll get to enjoy Sofra snacks and learn from author and recipe developer Andrew Janjigian and Sofra’s Executive Pastry Chef Maura Kilpatrick. You’ll learn to make several Armenian breads including Choreg (a traditional Easter bread), Tahinov hats (a flaky laminated bread with sugar and tahini) and Nazook (a spiral pastry filled with butter and chopped nut-streusel). And don’t worry, Sofra isn’t sending you home empty handed, everyone will get an autographed copy of The Bread Baker’s Pocket Companion and a bench scraper so you’re equipped with the tools to make your own breads at home.

The second class, scheduled for 6:30-9:00pm on Thursday, March 30th, is $150 and also demonstration-style with the added bonus that all proceeds from the class will be donated to the Turkish Philanthropy Funds — an earthquake relief fund for Turkey and Syria. Executive Chef Ana Sortun will walk you through how to make an assortment of savory pies, including a rolled broccoli and kale börek, a lamb börek with tomato brown butter and cacik and a flatbread made with thicker yufka (phyllo). You’ll get plenty of snacks throughout and, when it’s all said and done, a packet full of recipes to take home.
