Robert Fathman Hits the Big Apple

Chef Robert Fathman takes some time away from both Anthem and Azure to head to the James Beard House for a French, Asian, Latin, and Mediterranean-inflected dinner from The Heart of the Sea. On Thursday, February 12th, he rolls out a menu featuring dishes like seared scallop with gingered carrot puree, ruby red grapefruit, fennel pollen and Riesling sauce; sautéed Hawaiian prawns with braised, pulled Niman Ranch pork butt with roasted butternut squash and diabolique infused bourbon sauce; and espresso baked Alaska with hot buttered rum sauce.
