On Tuesday, June 20th, chef Keith Pooler hands over the reins for this month’s Harvest Review, allowing sous chef Brent Mimeault and pastry chef Liz O’Connell the pleasure of creating the menu for Raking Them In, a dinner highlighting New England clams. Mimeault gets things going at 6:00pm with a trilogy of classics – Clams Casino, Angel on Horseback and Oyster Rockefeller. The evening’s menu continues with courses like grilled littlenecks with chorizo crumble and ale-steamed baby roots; and chowder with Hobbs bacon, pommes duchesse and thyme cracker. O’Connell wraps things up with a chocolate oyster with a strawberry “cocktail” and candied lemon. Pat Woodbury of Woodbury Clams will be the featured expert of the evening, enlightening guests on all things shellfish.
