Chef Kevin Long invites guests to join him for an exceptional evening of food and wine on Thursday, May 19th when he welcomes Michael Silacci, Opus One Winemaker to Tosca for an imaginative six course tasting menu paired with wines from the incomparable Opus One. Combining the great winemaking traditions and innovations of both Robert Mondavi and Baroness Philippine de Rothschild, Opus One makes exceptional wines in the heart of the Napa Valley. Using spring produce to his advantage, Long’s menu for the evening boasts dishes like chilled local lobster cooked and cooled in sea water with mayonnaise, tarragon and upland cress; ragu of Vermont farm raised lamb topped with hand-cut tajarin pasta and spring fiddleheads; and roasted beef tenderloin baked in a crust of salt and herbs with bunched carrots and fagiolini.
