Escargot On The Menu

National Escargot Day is fast approaching on Friday, May 24th and fresh off the heels of harvesting season, over a dozen of Boston’s top chefs are crafting special menus featuring snails all week long. Wild Burgundy Snails will be popping up on tasting menus, a la carte dishes and even dessert to showcase the versatility of this tiny piece of protein. you can pop over to Bistro du Midi for escargot beignet with smoked white asparagus soup, Iberico ham and green almonds or swing by The Butcher Shop in the South End for corzetti with escargot, lemon and ramp pesto. The folks at the Fenway’s Tapestry are making “popcorn” snails (buttermilk fried petit snails with ramp ranch dip) while the team at Pastoral in Fort Point is plating snails con zogghiu (creste de gallo pasta with bone marrow, lemon & mint pesto and crackl’n crumbs).
