No. 9 Park Wine Director Cat Silirie heads up a series of Food and Wine classes at The Butcher Shop one of chef Barbara Lynch’s new South End spots. The next installment, to be held on Tuesday, February 17th, starts at 6:30pm and will offer guests a chance to Meet the Butchers. The artisans of The Butcher Shop will discuss and demonstrate butchering techniques as well as recipes, all featuring house specialties. They’ll present information on the best of premium cuts such as châteaubriand, delmonico and porterhouse steaks, as well as french lamb racks. Then they’ll discuss and demonstrate the different varieties of pâte, terrine, torchon and galantine. Three different small courses will be served, all paired with wines chosen and presented by Silirie. The price of participation is $50 per person, including tax and gratuity.
