Seven Fishes, Nine Chefs

Festa dei Sette Pesci, or Feast of the Seven Fishes, is the well-loved Italian-American tradition typically celebrated on Christmas Eve. Ledger Restaurant in Salem is getting a head start on the seafood extravaganza on Monday, December 10th, putting together a line-up of chefs to create a seven-course spread. The event starts at 5:30pm with a cocktail reception, but don’t fill up on all the passed hors d’oeuvres—the prix-fixe dinner starts at 6:30pm.

Chefs Colin Lynch of Bar Mezzana, Michael Serpa of Select Oyster Bar, Anthony Caturano of Tonno and Prezza, Tony Susi of RIPASSODante de Magistris of Dante and il Casale, Jay Silva and Matt O’Neil of The Blue OxDaniel Gursha and Pastry Chef Michelle Boland of Ledger will each be preparing a plate for the meal, details of which can be found below. Dinner costs $185 per person, with all proceeds going towards Chefs Cycle, a fundraising bike ride for members of the culinary community that helps support No Kid Hungry. Cod Fritter with creamy baccala

Course 4 – Tony Susi
Crab Risotto and tobiko butter

Course 5 – Dante de Magistris
Pasta con le Sarde
Spaghetti rotta, fennel, capers olive crumbs, pine nuts, grappa smoked raisins, sardine conserva

Course 6 – Jay Silva & Matt O’Neil
Smoked Tomato Cioppino, grilled lobster, clams, mussels, lobster roe aioli and garlic bruschetta

Course 7 – Daniel Gursha
Wild East Coast Halibut with blood orange foie gras sauce, honey nut squash puree, black winter truffle
