On Saturday, February 18th Gargoyles on the Square chef Jason Santos takes a trip to New York to team up with Sophie Daniels of Oregon’s Chehalem Winery for an Oregon Wine Lover’s Dinner at the James Beard House. The dinner, which costs $100 for members and $125 for non-members, starts at 7:00pm and starts out with liquid BLT shots, Kurobuta pork wontons and crispy oyster tostadas. Dinner continues with courses like his signature Hawaiian-style tuna poke with hijiki, pickled bean sprouts and red ginger; Kobe beef gyoza with black onion seeds, miso emulsion and aji Amarillo; and pan-seared sugar-crusted scallops with maple aioli, applewood bacon and Tabasco-soaked cherries.
