On Monday, November 3rd, chef-owner Chris Douglass welcomes chefs-authors Clark Frasier and Mark Gaier of Arrows to the kitchen at Icarus for a multi-course dinner based on recipes from their new book, The Arrows Cookbook: Cooking and Gardening from Maine’s most Beautiful Farmhouse Restaurant. Produce for the meal will be harvested from Arrows organic garden in Ogunquit, Maine. Some of the items on the evening’s menu: Poached Garlic Soup with herb butter profiteroles, thyme and red pepper creams; Garlic-Paprika Roasted Duck with white and sweet potato gratin, root vegetables and chard with honey-lavender roasted shallots; and Rosemary Poached Pears with chocolate creme anglaise.
