Koji is the national fungus of Japan (according to the Brewing Society of Japan). It’s a versatile agent of fermentation essential in the making of soy sauce, rice vinegar, sake and more. This all day course covers the basics of Koji from its many applications to how to cultivate it at home. The class runs from 10:30am-3:30pm and costs $100 which includes a koji inspired lunch.
