If you love a chance to go down the French wine rabbit hole, there’s no more fascinating winemaking region than the Rhône Valley. This week on Tuesday, April 25th, Forage’s Stan Hilbert has a couple of hidden gems from this famed region picked out to match up with chef Eric Cooper’s inspired spring dishes, such as Catfish Croquettes with Meyer Lemon & Espelette Mayo, Cured Olives with 2021 Crémant De Die “P’tit Jules” Achard-Vincent; and Herby Chicken with Lacto-Fermented Mashed Potatoes, Rosemary Gravy, Braised Greens with 2020 “Raffut,” Sylvain Bock, Ardèche.

With 30 different AOC appellations, more than 5,000 producers, and 27 grape varietals, there’s a lot of wine geekery to discuss and explore, so check out the omnivore and vegetarian menus below and make a reservation here between 5:00 and 8:45pm. Dinner costs $95 per person to dine in, or have the crew pack your vittles to go for two people for $160 (order here).
