On Monday, December 4th, Viale in Cambridge is being taken over. The restaurant welcomes Bradley Caldwell, a second-semester student in the Professional Chef’s Program at the Cambridge School of Culinary Arts (CSCA), as he learns exactly what it takes to design and execute a menu from start to finish. Caldwell will have a little help from chef-owner Greg Reeves, a CSCA grad, and the Viale kitchen team as he brings his concept to fruition on your plate either as a three-course prix fixe menu or a la carte.
