Biodynamic Wine Dinner at blu

Head to blu at The Sports Club LA on Tuesday, May 3rd for a celebration of organic food and wine. The evening begins at 6:30pm on blu’s outdoor patio with champagne and hors d’oeuvres like watermelon radish with aged goat cheese; smoked salmon-wrapped asparagus with lemon aioli; and raw oysters with pickled ramp mignonette. The four course dinner gets underway in the dining room at 7:00pm and features chef Tom Fosnot’s specially designed organic menu. Dishes include scallop ceviche with lime, green garlic, ginger and kaffir lime oil with thinly sliced chantenaise melon; seared wild salmon with potato-ramp puree, fiddleheads, morels and a red wine reduction; and roasted whole Vermont lamb with favas, preserved lemon and cardoon gratin. Each course will be paired with certified organic and biodynamic wines – that means no pesticides, herbicides, or chemical fertilizers allowed and only a few added sulfites, just the fresh, natural flavors.
