Chef Kevin Long welcomes Bertani Winery’s Giuseppi Carraturo to Tosca on Wednesday, March 29th for a six-course dinner designed to complement the wines of the prestigious Venetian vineyard, including the 1997 vintage of their flagship Amarone della Valpolicella Classico. Highlights from the evening’s menu include a mosaic of crab with almonds, cornichon, avocado and white anchovy; roasted lamb loin with arugula and rosemary vinaigrette; and short rib with savory vanilla spice and poached winter fruits. Pastry chef Maria Cavaleri Gilardo adds the finishing touch with gelato affogato and assorted cioccolatini. Dinner, which starts at 6:30pm, costs $110 per person.
