Beard Dinner Preview at Harvest Review

For the April chapter of the popular Harvest Review tasting series, chefs Keith Pooler and Liz O’Connell give Bostonians a sneak preview of the menu they’ll be rolling out at their upcoming dinner at the James Beard House. On Wednesday, April 5th, the evening’s menu is a veritable a celebration of spring with courses like ramp vichyssoise with cheese curd, guanciale and chanterelle dumpling; rissole roulade of sweet breads with a fricassée of morels and fava beans with juiced Vidalia onion reduction; and suckling pig three ways – ham, braised shoulder and roasted saddle with English peas and truffled purslane. O’Connell chimes in with strawberry-orange semi freddo with a rhubarb tart and fennel chips.
