Local wine lovers know that Forage in Cambridge has been championing natural winemaking practices and producers since way before it was cool. At this week’s wine dinner, have a check-in with the natural wines of California and see how far the industry has come. Chef Eric Cooper and wine guru Stan Hilbert have dreamed up a four-course menu of lovely pairings with a little help from their friend Tony Coturri who is a third-generation California winemaker and an outspoken advocate of natural winemaking. As always there are menus for omnivores and vegetarians alike, with matchups like Narragansett Creamery Burrata with Buckwheat Waffle and Arugula paired with 2021 Trousseau Noir, Broc, Solano County Green Valley.
