Kyle Bradish

Chef Kyle Bradish’s passion for food started with his family and the many outstanding meals he experienced at family gatherings growing up. He eventually took a job at a diner, before he decided to extend his education with an associate degree at The Restaurant School at Walnut Hill in Philadelphia.

After working as a sous chef at Kome, a fine Japanese restaurant in Philadelphia, he decided to make the move to Las Vegas where he worked with acclaimed chef Joel Robuchon. In 2017, he joined the Wynn family as a sous chef at Lakeside inside Wynn Las Vegas. He eventually jumped at an opportunity to help Encore Boston Harbor open as chef de cuisine at Rare Steakhouse, where he stayed until taking his latest position at Cheese Meet Wine.

In his role as executive chef at Encore Boston Harbor’s Cheese Meet Wine, Bradish hand-picks imported and domestic meats, soft and hard cheeses, tinned fish, and other small bites to create unique charcuterie pairings. Served alongside a perfectly curated wine list, Cheese Meet Wine allows guests to experience international flavors before heading to the casino floor or dinner at one of Encore’s other spectacular dining destinations.

A lover of the great outdoors, Bradish spends his free time outside the kitchen hiking, mountain climbing, snowboarding and other adventurous activities. As an avid traveler, he also enjoys spending time learning about food and its origins while experiencing different cultures from around the world.
