Jacqueline Bullio

A homegrown New England chef and graduate of Johnson & Wales University, chef Jacqueline Bullio is one of the rising stars at Encore Boston Harbor. As executive chef of On Deck Burger Bar, Bullio has risen to the challenge with her menu of sports bar specialties and gourmet burgers. Tongue-in-cheek interpretations of classics dishes capture her creativity and make On Deck Burger Bar a fan favorite.

Bullio’s love for food was born out of a childhood adoration for Julia Child and Jacques Pépin and her large Italian family ensured the dinner table was always the center of attention. After getting her bachelor’s degree in Culinary Arts from Johnson & Wales University, she held positions as chef de partie and sous chef for several of the finest bistros and taverns on Cape Cod and Nantucket including The Oyster Cabin and Straight Wharf Restaurant. She was on the opening team for the Ocean House in Watch Hill, Rhode Island, a Forbes Five-Star, Relais & Chateaux property.

In 2016, she became sous chef for Scarlet Oak Tavern, the highly acclaimed bistro in Hingham, Massachusetts. Among her many responsibilities, Bullio worked with the executive chef to develop a new farm-to-table menu for an already thriving 250-seat restaurant.

Bullio says that she’s been “waiting many years for Encore to open so that I could work here.” She currently lives in Everett, Massachusetts, only minutes from Encore Boston Harbor, and enjoys spending time with her friends and loveable pit bull terrier.
