Bubbly Dinner at Bergamot

On Thursday, October 16th, Bergamot welcomes one of the bright stars of the bubbly world for a multi-course Champagne dinner. Vincent Laval, the third generation vintner from Champagne Georges Laval, makes his Boston debut hosting this event alongside Beverage Manager Kai Gagnon. Chefs Keith Pooler and Dan Bazzinotti have designed a menu to accompany wines from the small production vineyard (think: gently poached oyster with grilled king oyster mushrooms, Chantenay carrots, Brussels sprouts and almond-sherry sauce, and butter-poached beef roulade with endives, piquillo peppers, cipollini onions, fingerling potatoes and aged balsamic).
