The folks from Beacon Hill Bistro have always been sticklers for seasonality. But the name of the game really is fresh for Executive Chef Josh Lewin who takes inspiration, not to mention the actual produce, for his Monday night Market specials directly from the stands of the Central Square Farmer’s Market in Cambridge. Whatever strikes his fancy that morning will make it into the special for the evening. Prices will vary depending on the dish but one thing remains the same – if you want it, better get there early. The dish, which has previously been tasty treats like poached Pete and Jen's egg with pea greens, new potatoes, lamb's bacon and elderflower; and olive oil poached sunflower "heart" with new potato, purslane, and sunflower seed aioli, will only be available until the ingredients run out.
