Chef Will Gilson, who’s expecting to open his first restaurant at the beginning of October, has had a change of heart about his original name choice: Bridgestreet will now be called Puritan & Co. Having discovered that the building was once home to the Puritan Cake Co. and in celebration of his Mayflower-y ancestry (he’s a 13th generation descendant), Gilson decided Puritan & Co. better captured the essence of his concept, which has also undergone some minor tweaking. But rest assured, whatever the name, the restaurant will stay true to Gilson’s culinary vision serving locally-sourced, honest, New England-inspired food.
