It's no secret, chef Jason Bond is a fan of pork - his made-in-house charcuterie plates are known around the city, and he's been lovingly pasture-raising two Mangalitsa pigs, Black and Tan, to be the guests of honor at an upcoming dinner at the Beacon Hill Bistro. On Wednesday, March 3rd he pays tribute to the other white meat with an entire six-course menu made using the king of all heritage breeds - the Mangalitsa. A Hungarian breed that was all the rage in the early part of the twentieth century, Mangalitsa is considered, thanks to more marbling and high quality fat, some of the world's most flavorful and best tasting pork.
