Spring is all around - at Tomasso Trattoria they're celebrating this most bountiful of seasons with a special Spring in New England pig roast and dinner. On Sunday, June 14th, chef Justin Melnick builds a five-course menu with only local and sustainably produced foods - herbs and spring veggies from Verrill Farm, cheese and dairy from MA and VT, even the guest of honor, a New England raised pig, is local. See (and taste) how it all comes together in dishes like housemade mortadella and smoked bluefish pate on a garlic crostino; and slow roasted porchetta stuffed with herbs served over a parsnip purée with microgreens.
