In that spirit, chef Greg Jordan has searched high and low for sustainable, farm raised roes to feature in the new Caviar Flight at Mare. Selections will change on a weekly basis but you might expect to find Manchurian Osetra from China, Royal White Sturgeon from California or Wild Sea Trout Roe from Washington State served with Jordan's delectable little polenta blinis.
