Chef Marco Suarez Takes Over at Eastern Standard

Just in time for the Post Season, Eastern Standard announces the appointment of Marco Suarez as their new Executive Chef. With a degree from the Culinary Institute of America under his belt, Suarez cut his teeth locally at South End staple, Tremont 647 and Back Bay newbie, Bouchee. His extracurricular culinary explorations have taken him from St. Thomas to Tuscany, Uruguay to St. Thomas. Suarez is already making his mark on the menu at the Kenmore Square favorite – the Bluefoot chicken coq au vin is one of his dishes and the house made charcuterie plate (with head cheese boudin noir, venison jerky and duck offal and dried cherry pistachio terrine) picks up where opening chef Jamie Bissonnette (now of KO Prime) left off.
