Gardner and his team put the whole pig to good use in courses like crispy fried pork rillette bruschette served with lardo, roasted Roma tomatoes and basil on grilled focaccia; braised bacon with chick pea, roasted pepper, swiss chard and trotter ragout; sweet pigs in a blanket – pecan praline mousse roulade with balsamic macerated strawberries and mint.
