Demo & Dinner at Bondir

Be among the lucky few pork-lovers to enjoy a day-long Mangalitsa butchering demo/dinner with chef Jason Bond. On Tuesday, January 8th, he welcomes ten guests to join him in the Bondir dining room as he breaks down the tasty Austro-Hungarian heritage breed, which is often referred to as the Kobe beef of pork. The hands-on demo starts at 11:00am (so you may have to take an early and extended lunch). Bond, who’s just finalizing details for his second project which will open in Concord in the middle of next summer, will be covering traditional and modern techniques, including sous-vide, curing, dry-aging and how to use the more difficult parts. He’ll also cover topics like how to manage and pace usage – from delivery right on through to the last bite. At 6:00pm, when the demo wraps up, guests will sit down to a multi-course menu featuring the day’s work paired with beer and wine.
